Ingredients-
1/3 cup grated cucumber
2 tbsp finely chopped spinach
1/2 cup rice flour
2 tbsp fresh curds
1/4 tsp chilli powder
a pinch turmeric powder (haldi)
1 tbsp oil for cooking or butter
salt to taste
Method-
- Combine the cucumber and salt and keep aside for 10 minutes.
- Squeeze out the water from cucumber
- Combine all the ingredients in a bowl.
- Add enough water (including the squeezed cucumber water) and mix well to make a smooth batter.
- Keep aside for 10 minutes.
- Heat a non-stick tava, spread a spoonful of batter to make a small lunchbox size Uppapam.
- Cook on a medium flame using oil/butter till it turns light brown in colour on both the sides.
- Repeat with the remaining batter to make more Uppapams.
