Spinach Cucumber Uttapam

Ingredients-


1/3 cup grated cucumber
2 tbsp finely chopped spinach
1/2 cup rice flour 
2 tbsp fresh curds 
1/4 tsp chilli powder
a pinch turmeric powder (haldi)
1 tbsp oil for cooking or butter 
salt to taste

Method-

  • Combine the cucumber and salt and keep aside for 10 minutes.
  • Squeeze out the water from cucumber
  • Combine all the ingredients in a bowl.
  • Add enough water (including the squeezed cucumber water)  and mix well to make a smooth batter. 
  • Keep aside for 10 minutes.
  • Heat a non-stick tava, spread a spoonful of batter to make a small lunchbox size Uppapam. 
  • Cook on a medium flame using oil/butter till it turns light brown in colour on both the sides.
  • Repeat with the remaining batter to make more Uppapams.
